今、素性のわかる豆腐作りをテーマに取り組んでいます。
誰が作った大豆なのか、誰が作った豆腐なのか、非常に簡単なようですが現代の流通機構では、食品の素性を知りたくてもなかなかむずかしいようです。大豆を作る人、豆腐を作る人、配達をする人、買ってくれる人、食べてくれる人、みんなが顔見知りになり、この人のために大豆を作る、豆腐を作る、配達をする。この人が作った大豆だから、豆腐だから安心、人と人とのつながりの中に結ばれる信頼関係、そして安心感が大切です。
とうふ工房わたなべは、安全で体によい食品、それはこんな人間関係から生まれてくると考えています。

Our company has been making tofu while we value the identity of every key player. In the modern distribution system, it seems very simple to know who produces soybean and who makes tofu. However, it is very difficult to clarify the identity of every food product.
Since all the key players involved in producing soybean, making tofu, delivering tofu, buying tofu and eating tofu are acquainted with each other, this strong connectedness brought about  "respect for each other" and "sense fo safety"  among others.
Tofu Kobo Watanabe believes that safe and good food is made based on good human relationships. We will continue to keep our promises to the society and to serve as the bridge between local farmers and consumers brought together by tofu making..
